Chickpea!
This is so quick and dirty I don’t know why I didn’t think of it myself.
Skillet Cornbread with Chickpeas!
I found the recipe at pulses.org. And it’s a recipe from Canadaland. So… bonus points.
We eat a goodly amount of cornbread in our household, and I’m super excited about getting some protein in there in the form of pulses.
We just can’t tell G-Man that he’s gobbling up chickpeas with his cornbread.
That just won’t fly.
In fact, I’m writing this post from the pantry floor right now.

The next time I throw this together I will use a coarser cornmeal, which is my preference.
FYI ~ G-Man had no idea he was eating chickpeas. No idea at all.

Mmmmm cornbread. You sneaky devil…. slipping in chickpeas to perfectly good cornbread. That’s not nice (but it is a bit hilarious) I can imagine you sitting there watching for his reaction and him looking back you wondering why you’re staring at him while he’s eating.

Chickpea isn’t even whispered in my place. It’s like foreign language—which of course it is since I am Norwegian. Nevertheless it look great!

Hahaha, Otto! I slipped some chickpeas in my breakfast smoothie this morning. It’s like tofu, you don’t even know it’s there…. unlike spinach. But I love spinach like Popeye loves spinach, so it’s all good. 😀
