The long weekend is coming.

True Confessions ~
I never ate a butter bean until this week. Thank you, Chef Oliver.
I won’t lie. Cooking three new recipes a day for Jamie Oliver’s 5-Day Veggie Challenge has kicked my butt. Pics posted on Instagram here.
That being said, I’m glad we did it. G-Man surprised me. All I heard all week was Mm. This is gooood. Grunt. Not what I expected. The food was vibrant, varied, and satisfying. I didn’t cook all the recipes… yet. This was due to scheduling and leftovers. The portions were generous, and I didn’t want anything to go to waste. The only recipe I didn’t and won’t be trying is a curry. We’re just not into it.
Any substitutions made were all vegetarian. We stayed true to the 5-day challenge. Because this was so much fun, I’m planning to continue with 3-4 vegetarian days each week. But sometimes I just want my fish, poultry, and a good pork tenderloin.
