It’s no secret. Everyone who knows me knows that I have a little fondness for Guinness. I think I mentioned that yesterday. If I’m going to drink a beer, it’s most often going to be a dark beer, a stout….a Guinness. It’s one of my fave things.
I have another fave thing, which I don’t indulge in very often. The cupcake. It’s a lovely little confection that can be dressed up or dressed down, and always makes me smile. It makes me think of birthday parties and family celebrations, children and the PTA.
Leslie Fiet, owner of Mini’s Cupcakes in Salt Lake City, Utah has put these two of my favorite things together. And if I were in SLC, Utah, I’d be standing at her door waiting for Mini’s Cupcakes to open. Oh, yes. I absolutely would.
The Guinness cupcake is a cupcake made and soaked with Guinness and then topped with a Guinness and chocolate glaze….
That would be the one on the left, as if you couldn’t tell by all that dark, chocolatey, Guinness goodness. The one on the right is Leslie’s Irish Cream and Coffee cupcake. Oh, my.
